Cheryl Rogers, a B&B customer from Ames, Iowa, sent us pictures of the standing rib roast (prime rib roast) she recently grilled for a Thanksgiving meal that was fed to a hospice house in Ames. The pictures show the process from start to ending, the only thing missing is the recipe she used. We’ll have to work on getting it from her.

A lot of our customers love to cook a whole beef tenderloin for their holiday feast! It is a boneless cut that is fairly easy to prepare and simple to carve! Charles Hill, one of our customers, made this beef tenderloin for his Thanksgiving meal.

A standing rib roast is a cut of beef from the rib section where rib-eye steaks are generally cut from. A lot of our customers know this particular cut as “Prime Rib”. It’s called a “Standing Rib Roast” because it includes up to seven rib bones and is most commonly cooked in a “standing” position.
To ensure you have enough to go around, we recommend a serving size of two people per rib, with a minimum size of three ribs. Anything less than that is basically a nice thick steak.
A lot of our customers love having ham for the holidays. Hams are perfect for Thanksgiving, Christmas, Easter, Fourth of July, Birthdays, or any holiday. Our third generation butchers always recommend bone-in hams! They provide more flavor and the bone can be used to make soup. Leave a little extra meat on the bone and you can easily make a great batch of ham and beans.
This isn’t much of a secret. Having duck or a goose for a holiday feast is actually common. Duck and Goose meat is darker and usually more moist than Turkey meat. They also tend to be smaller. So, you can still have that traditional turkey, just choose a smaller one. One cool perk with doing to birds, you can do two different types of stuffing!
Seriously, who doesn’t love a great steak? You know those pilgrims would have jumped at the chance to eat a nice juicy New York Strip steaks such as the ones picture! Santa, come on, you know can tell by his shape he is a steak lover.
There’s rib-eye’s, t-bones, porterhouses, New York Strip steaks, Filet Mignon, and more! Everyone has their favorite cut steak and any of these steaks are the perfect addition to a holiday feast. As third generation butchers, we will custom cut your Thanksgiving steaks to your specification.
How about an Italian Thanksgiving? Columbus did discover (or re-discovered to be politically correct) the Americas. For those who want an Italian theme to their Thanksgiving feast you can add an Italian Steak Roll. Italian Steak Rolls are made from a thin cut round steak. We add a layer of our famous mild or spicy Italian sausage, some mozzarella cheese, and peppers to the round steak and roll it. This makes for a very flavorful addition to your Thanksgiving feast.
A pork crown roast is a special roast made from the rib section of the pork loin. We cut the roast and then tie it into a circle so it resembles a crown. It is typically filled with stuffing while it is cooked. Pork Crown roasts are usually served at a special meal, such as a Mother’s Day Dinner.
